About the Role

The Food and Beverage Controller manages all aspects of food and beverage costs, inventory, and compliance to maximize profitability while ensuring operational efficiency in a hotel setting.

Responsibilities

  • Monitor food and beverage costs within budget
  • Conduct inventory counts and verify stock movements
  • Prepare cost reports and analyze variances
  • Recommend reorder quantities
  • Review purchase orders and supplier invoices
  • Ensure compliance with procurement policies
  • Manage recipe costing and menu pricing
  • Identify and address wastage or discrepancies
  • Perform spot checks and audits of outlets
  • Reconcile inventory records with accounting systems
  • Support internal and external audits
  • Collaborate with purchasing, kitchen, restaurant, bar, and finance teams
  • Maintain food safety standards and internal controls
