The Food and Beverage Controller manages all aspects of food and beverage costs, inventory, and compliance to maximize profitability while ensuring operational efficiency in a hotel setting.
Responsibilities
- Monitor food and beverage costs within budget
- Conduct inventory counts and verify stock movements
- Prepare cost reports and analyze variances
- Recommend reorder quantities
- Review purchase orders and supplier invoices
- Ensure compliance with procurement policies
- Manage recipe costing and menu pricing
- Identify and address wastage or discrepancies
